  • The natural gum tragacanth is the sap of several species of  Middle Eastern legumes of the genus Astragalus, including A. adscendens, A. gummifer, and A. tragacanthus.
  • The plants are small, low bushy perennial shrubs having a large taproot along with branches and grow wildly in the dry deserts and mountainous regions of South West Asia, from Pakistan to Greece and in particular, in Iran and Turkey
  • Some of these species are known collectively under the common names goat's thorn and locowed.The gum is sometimes called Syrian tragacanth.
  • Gum tragacanth is a viscous, odorless, tasteless, water-soluble carbohydrate obtained from sap which is drained from the root of the plant and dried. The gum seeps from the plant in twisted ribbons or flakes which can be powdered
  • Tragacanth consists of two polysaccharides of Galactronic acid connected by 1,4 coordination substituted by Xylose and Oxyxylose.
  • Powdered Tragacanth has a white to yellowish white color and no odour.
  • Chemically gum tragacanth consists of two fractions. One fraction is termed Tragacanthic acid or Bassorin, which represents 60– 70% of the total gum
  • Gum tragacanth has many industrial uses, including cloth finishing, calico printing and waterproofing of fabrics
  • It is used in pharmaceuticals and foods as an emulsifier, thickener, stabilizer, texturant, salad dressings, condiments, sauces, bakery emulsions, fillings, soft drinks, jellies, deserts, flavours and
    spices.
