  • Methyl salicylate has a fragrant, minty smell that has made it a favorite flavoring in candies. It is also the major constituent of oil of wintergreen, making up over 90% of the essential oil from the wintergreen plant
  • Methyl salicylate is a liquid at room temperature and is relatively insoluble in water. It is also quite toxic
  • Most methyl salicylate used in foods is made synthetically, a cheaper process than its extraction from wintergreen leaves or sweet birch bark
  • Methyl salicylate (MS) is used as a fragrance and flavoring agent but is lethal at sufficient doses and is teratogenic in rodents.
  • Methyl salicylate is manufactured from the steam distillation of macerated leaves from the low growing plant, Gaultheria procumbens Lime. or from the bark of Betula lenta (Sweet Birch).
  • Methyl salicylate can also be derived synthetically, and this synthetic variety of methyl salicylate is considered to be structurally and functionally equivalent to the naturally occurring Oil of Wintergreen
  • The pesticidal uses of methyl salicylate include vertebrate repellent
    on terrestrial and greenhouse food crops and as an insect repellent when incorporated into a coating on the internal and outer surfaces
    of cartons used to store consumer products like human and pet foods, animal feeds and nonfood items such as clothing and textiles.
