- Coconut milk is a
sweet, milky white cooking base derived from the meat of a mature
coconut. The color and rich taste of the milk can be attributed to the
high oil content and sugars. This liquid, when found in a young coconut,
is more unambiguously referred to as "coconut water" or "coconut juice".
In Malaysia and Indonesia coconut milk is called santan and in the
Philippines it is called gata.
- Coconut milk powder is
an ingredient in most Southeast Asian cooking and is not the liquid
inside a coconut. It is prepared by soaking the grated flesh of a
coconut in hot water or scalded milk, then straining the combination.
Coconut milk is classified as thick, thin, or coconut cream. Thick
coconut milk is the result of the first soaking and squeezing. If this
milk is refrigerated it separates, and the top layer is the
cream.
- Coconut milk is made by
squeezing the grated flesh of a coconut with some hot water resulting in
a rich white liquid that looks very much like cow's milk. Coconut milk
should be distinguished from coconut cream. Fresh coconut milk, when
refrigerated, and canned coconut milk, if not shaken, separates into two
layers, with the thick layer being the coconut cream and the
thinner layer constituting the milk.
- Coconut milk is the
liquid obtained by manual or mechanical extraction of grated coconut
meat. Coconut milk is an important ingredient of many foods of Asian and
Pacific regions including curry, deserts and sweets. In general, thermal
treatment is given to food fluid to kill pathogenic micro-organisms and
degrading enzyme in order to increase shelf life, product quality and
product safety.
- Coconut milk finds a
special place in many tropical cuisines, especially Thai, Singaporean,
and Malaysian. It acts as a source of a wide range of vitamins,
minerals, potassium, folate and other vital nutrients. Talking about the
coconut milk calorie, 1 cup canned coconut milk contains 445 calories,
whereas frozen milk contains 485 calories. Raw coconut milk contains the
maximum number of calories, which are approximately 552. Coconut milk is
available in the market in different styles of packaging like cans and
tetra packs.
- Coconut milk beverage
is made from freshly extracted coconut milk. The milk obtained is
standardized, homogenized, sterilized and packed to suit market
requirements. The entire process is carried out under strict hygienic
conditions.
- GLOBAL demand for
coconut and coconut products has increased considerably in recent years
and it is expected to continue in tune with the growth in world
population. The consumption will also increase in both edible and
industrial uses of coconuts. Uses of coconuts and its products as
functional foods, nutriceutical, pharmaceutical and cosmetics as well as
bio-fuel have greater market in the years to come.
- Spray Dried Coconut
Milk powder is an unfamiliar product to the Indian consumers where as a
premium product in the world market. The product was inaccessible to the
Indian consumers for want of a viable technology for its manufacturing.
However, the technology for the manufacture of spray dried coconut milk
powder has now been developed by the Central Food Technological Research
Institute, Mysore in Karnataka under the sponsored programme of the
Coconut Development Board.
- India could make an
entry for the first time into the export market of coconut milk powder
through Sri Ram coconut products. This gives immense satisfaction to Mr.
Rajendran, fulfilling his desire of being the pioneer in the field. Even
though the product is comparatively price disadvantageous in the
international market Sri Ram could able to export 50 tons of Coconut
Milk Powder to Middle East, UK and Pacific countries.
- Santa Maria is
launching tinned coconut milk onto the Russian market, reflecting the
growing interest in Asian foods. Retailing at €2.93 for a 400ml serving,
the product was launched onto the market last month in an attempt to tap
into the growing demand for exotic cuisines, particularly Asian.
Containing pure coconut pulp, the product is said to be the perfect base
for a variety of southeast Asian dishes.
