Beta-carotene

  • The beta-carotene colorant available today is either an extract taken from a number of natural sources, such as palm oil, algae and carrots, or is made synthetically. The latter form is an approved “colorant not requiring certification,” but its use in an “all-natural” product depends on the manufacturer’s definition of natural.
  • Both natural and synthetic beta-carotene are analytically indistinguishable.
  • Typical of carotenoids, beta-carotene is susceptible to degradation by light, heat and oxidation. The natural form is insoluble in water and slightly soluble in oil.
  • The development of a number of manufacturing approaches for the synthetic version make for easier suspension in oil, and with appropriate emulsification, make it water dispersible.
  • The availability of the synthetic form and its standardized uniformity, as well as the consumer perceived value of beta-carotene as a pro-vitamin, has led to its use in a large number of products that are colored in the yellow to orange range.
  • Applications for beta-carotene include margarines, beverages, cakes, soups, milk-based products, desserts, candies, salad dressings, pastas and others.
